1 cu melted butter
3/4 c sugar
3/4 cu brown firmly packed sugar
1 t baking soda
2 t coconut extract
1/2 t salt
2 beaten eggs
1 c finely chopped coconut (2 cu run thru food processor)
2.25 c flour
1 c chocolate chips (6 oz)

Pre heat 350
Melt butter, add sugars, soda, extract, salt, eggs. Stir. Add coconut, half of flour and chocolate chips. Stir in rest of flour. Let rest 10 minutes, drop by teaspoons on ungreased cookie sheet 9-11 minutes.
Yield 6 doz

All Nighter Cookies
1.5 cu melted butter
1 cu sugar (divided into 2)
1 cu firmly packed brown sugar
2 beaten eggs
1/2 t salt
2/3 mashed banana*
3.5 cu flour
1 cu chopped nuts
2 cu peanut butter chips

Preheat oven to 350. To butter add 1/2 sugar, brown sugar, eggs, baking soda, and salt. Add bananas. Slowly work in flour, add nuts and chips. Roll into walnut sized pieces (Chill if sticky), roll in sugar, flatten on sheet. Bake 10-12 minutes.
Yield 8-10 doz

* can be subistuted by 1/2 cu baby banannas and 5.1 oz package bananna pudding mix
