I was thinking about you: http://lunchinabox.net/category/dietary/glutenfree/

This all looks rather elaborate for me, but I'm trying to think healthier, and get into it before the beasts need packed lunches.

Not too elaborate. Now I normally drop one a week out of sheer laziness or there's just too many leftovers. I may declare tonight to be leftover night just because there's no room in my fridge for new ones. =)

I bow to you, Culinary Goddess. I cook, but there's not much variance. About how much time do you put into prep & cooking each week, or daily? I think I need to be cooking all day, once or twice a week.

No bowing necessary. Its necessary for me to cook all the time. With the Celiac Disease there isn't much out there that I can eat safely, so I have to do most of it from scratch.

Last night was easy. The steaks took about 20 on the grill while my mom boiled the corn. I made the potato salad earlier in the day and it took about 40 minutes of hands on work total. I never got around to making the slaw 'cause I was feeling lazy, but that usually only takes about 10 minutes. Hrmmm. I guess I spend about an hour or so a day, usually split up. Most of the time less.

For this week, the taco salad will take the most amount of time just because of the sheer amount of cutting involved.
